Our washed process begin with hand-picked, fully ripe red cherries that are depulped and washed, then soaked for 12-16 hours. After soaking, the beans are dried on cement floors inside a controlled greenhouse until reaching 12% moisture. Once they reach the optimum moisture level, the beans are hulled to remove their parchment. This careful method produces a cleaner, brighter cup with refined clarity.
